IDLI


Ingredients:
1 cup Urad dal
2 cups Rice
Salt to taste
1/2 tsp Fenugreek seeds

Method:
1. Soak Urad dal and Rice separately for at least 3 hrs to overnight (~8hrs)
2. Add fenugreek seeds to rice while soaking (optional)
3. Grind them separately and make batter. The Urad dal should be smoothly ground. The rice can be coarse and granular
4. Add salt
5. Mix the dal and rice batter thoroughly
6. Leave it overnight (~8hrs) to ferment. The batter is ready when you see the bubbles rising
7. Gently scoop the batter (do not mix or stir) and pour into the greased idli pans. Steam the idlis in a pressure cooker (without the weight) for ~10 minutes. The vessel should steam like a steam locomotive
8. Allow it cool for a minute and serve with coconut chutney
